Duck Egg Sponge... with Passionfruit

During the week I was the lucky recipient of 6 duck eggs, courtesy of a work colleague. He keeps ducks and said they have waaaay too many eggs, so he was happy to give them away.  Looking at the alabaster shells I thought... what could I make with these?

I turned to the world of social media for assistance. Well, actually I tweeted out a 'help!' to Fran (aka The Food Marshall) and Liz of Bizzy Lizzy's Good Things. Liz suggested a couple of sponge recipes, and Fran pointed me to an original recipe for a duck egg sponge by Lorraine of Not Quite Nigella fame. Thanks to Lorraine's trial and error, I piggybacked on her success and followed her recipe. Not quite to a tee, for I (and hubby) wanted to use passionfruit, so I subbed out her jam.

I have never used duck eggs before and didn't know what to expect. Firstly, they take a wallop to crack the shell! My usual trick of tapping a chicken egg against the side of a bowl just didn't cut it with the duck eggs. The whites were cloudier, and the yolks paler, when compared to chicken eggs.

The recipe called for beating the yolks and the caster sugar for 8-10 minutes. Lorraine made this easy to follow by stating '6' on her Kitchenaid, which I have as well. I set the machine off to do its thing and minutes later the mixture had grown in size to a pale, bubbly mass.

The result?
A tasty delicious sponge, with a stronger flavour than using chicken eggs. The recipe called for custard powder so the cake had a beautiful yellow colour and a strong crumb. I scooped out the contents of a passionfruit and let the juices dribble ever so slightly over the top and down the sides.

Fair Food, the Documentary

Last Wednesday, I attended a screening of a film called 'Fair Food, the Documentary' which was shown at the National Library.
The film was produced by the Australian Food Sovereignty Alliance. The moderator for the night was Dr Nick Rose, the ASFA National Coordinator.
He was assisted by a panel, which fielded questions after the film. The four panellists were:
David Pocock – Vice Captain of the ACT Brumbies
Michael Croft – outgoing AFSA President
Penny Coffey – of Caroola Farm, and
Kurt Neumann – Chef of Grazing restaurant at Gundaroo

The film
This documentary was a crowd funded venture, with just over 260 people contributing finds for its creation. It has currently been shown at specially organised viewings in a number of cities and is likely to go on sale as a DVD in a few months, when the round of screenings has finished.

What is it about?
Fair Food is a documentary, born from the need to tell the story of how ‘broken’ our current food system is in Australia, and the need for a fairer system that not only compensates farmers and food producers appropriately, but also to give consumers a real choice about the food they buy. The large supermarket chains of Woolworths and Coles have over 70% of the market share in selling food to Australian consumers. The combined pressure these two have directly controls the margins and output required from our food producers. This in turn has greatly affected the quality of our soils, as more and more is demanded in yield from crops, and higher and more potent amounts of fertilizer are used.

More yield means more clearing of land.
More fertilizer means run off into our waterways and rivers.

In years gone by, farmers would receive 90c in every $1 of product they made… these days they are lucky to receive 10c in every $1 they produce. Every week, nearly 7 farmers walk away from their land, and the rates of suicide in rural areas is staggering; nearly twice the national average.

The system seems to have so many ‘middle men’. From buyers, to distributors, to logistics, to warehouses, and finally to supermarkets. It seems that the supermarkets dictate what is made available to the consumer, whether the consumer wants it or not. There seems to be a never ending supply of fruits and vegetables that are not actually in season in Australia. Cherries and navel oranges from the United States. Garlic from China. Asparagus from Peru. Apples which have laid dormant in cold storage for months. The list goes on….  Costa Georgiadis from Gardening Australia appears in the film and talks about the loss of seasonality. The availability of produce doesn’t fall in line with the seasons anymore, when, thanks to the global market you can buy virtually anything, all year round. People have lost the passion and anticipation for the next seasons crops.  

How do we change the system?
There are so many ways people can change the system.  Vote with your wallets, your feet and your choices.

Purchase from non-supermarket channels – there are plenty of farmers markets, local and independent grocers, fruit and veg stores, spice stores, ethnic and specialty stores.

Grow your own – whether you have a large yard, or a balcony there are always things you can grow. A question was asked of the audience; “How many of you grow food at home?” about less than 5 people stayed seated! The moderator advised when the same question was asked of random strangers, about 50% said they grew food at home.  Do you grow food at home?

Ask questions – Ask where the meat in the produce section comes from, ask at a restaurant where the food is sourced. You may be surprised by the answers.  

This film was very well done and was very thought provoking. There were interviews and discussions with a number of producers and others involved in food production. Plenty of statistics were presented, which really made you think.   

A very interesting topic that cropped up from the audience discussion after the film was about food miles. Many people are conscious about the many miles, and cost of transport and burning of fossil fuels involved with transporting food. Many of us seek to buy food that is grown nearby to where we live, but have you ever stopped to think about abattoirs? It was very interesting to hear that there are very few remaining abattoirs in New South Wales, as many have closed over the years. Penny Coffey of Caroola Farms told how she trucks her poultry 3 hours from her farm to an abattoir in Bega > assists in the 6 hours it takes to process her animals > then trucks the produce for 3 hours (in a refrigerated truck) back to her farm.  A 12 hour round trip, just for her produce to be in ready state for sale.

In My Kitchen - February 2015

Welcome to my In My Kitchen (IMK) update for February 2015. This post is part of the IMK series, brought to you by the lovely Celia, of Fig Jam and Lime Cordial. Pop over to her blog to link up with bloggers from all over the world, for a glimpse into their kitchens and lives for the last month. Its a very interesting read, and I make several trips back to her page for updates. Many a cup of tea has been had as I peruse blogs from all over the globe.

My kitchen this month has seen lots and lots of fresh produce. The vast majority of which has been purchased from farmers markets, sunday markets, fruit stores, some from my own garden, some from a neighbours garden, and some lovely jam from a work colleague. This year I am making great efforts to source our produce from non-supermarket sources. Firstly to buy as close from the producers as I can, and secondly as it is generally far better quality. I am in the process of adding to my existing vegetable garden beds and we have plans for more fruit trees for the yard.

The Capital Region Farmers Markets are the 'crème de la crème' of markets, but a bit of a trek from Tuggeranong each week. When I do make it there on a Saturday morning, I make sure I stock up. Here was my last haul.

Bought from the same markets was a delicious fruit loaf. I am quite proud of my precision loaf cutting. I popped this in the freezer, so I could have a tasty breakfast for the days that followed.

A work colleague was inundated with plums from their plum tree. Apparently only half their tree fruited, but they estimated that still produced nearly 30kg!! I swapped an empty jar and some home grown chillies for a large jar of their cardamom plum jam, nice.

I have purchased a few whole watermelon this month. Each time I pick up these monsters I still get that childish urge to smash the melon on the ground, just to see what happens, but then I quickly grow up again and sensibly place it in the car. I saw recently at a plant nursery baby watermelon seedlings. I wonder if they would work in the Canberra climate?

In my kitchen are some lovely condiments, purchased online from Farmhouse Direct. The apricot vanilla conserve was consumed over the course of 2 weeks. Devoured atop of cream cheese spread atop of toasted fruit loaf (see above). What a great flavour combination!! The spiced cherry jam and balsamic essence have yet to be opened. 

I am always on the look out for a new tea. This toasty nougat sounds perfect for the cooler days we have experienced of late.

A new book to add to my bookshelves... This book has some great recipes and tips for making everyday foods at home. I love that it gives you more control over exactly what goes into whatever you make, plus its a nod to 'getting back to basics' which is nice.
